Cedric says the idea comes from traditional Caribbean jerk seasoning fused with American barbecue habits. Anderson adds the result is bold, fragrant and lively, marrying warm jerk spices with thyme, dark brown sugar and a splash of rum.
The signature paste starts with habaneros, garlic, scallions and onion, blended with dark rum, soy sauce, dried thyme, ground allspice, brown sugar and smoky chile powders, plus salt and pepper to taste.
